CLASICO GIN SOURS COCKTAIL

When someone informed me there was such a thing as world pistachio day I had to hold back laughter, I swear every day is World something or other day these days. But you know what, rather than be a grumpy old git I have decided to embrace them, since I want every excuse I can these days to celebrate. Lockdown has certainly lowered my bar for what I consider celebratory events. It used to be birthdays, Christmas, Easter (only because of the chocolate). Whereas now…it was your best friend’s aunts dogs birthday? Cheers to that! Finally got rid of that suspicious looking tin at the back of your cupboard that was years out of date? Let’s crack open the prosecco! World Pistachio Day, hell yeah I’m making a pistachio cocktail and loving every second of it!

This months gin was inspired by the Irish flag, mint (green), marshmallow (white), and grapefruit (orangey-red-ish). It may not sound like a combination that works, but it does! Trust me, and once you have fallen in love with the gin, it’s time to try it with something a little more exciting. For an Irish cocktail it had to be something boozy…and what’s got more booze in it than a Martini! This Martini is a lot softer than the usual, with the cream and baileys giving it a really rich and almost dessert like flavour. But that doesn’t mean you won’t be walking side ways after your third! Just how the Irish like it! 

So, without further ado….let’s get drinking, as they say in Spain:

INGREDIENTS

50ml El Clasico Gin

25ml Pistachio Syrup*

25ml Fresh Lemon Juice

25ml Egg White (roughly one egg)

Slice of lemon to Garnish

*To make Pistachio Syrup simply combine equal parts water and sugar in a pan. Turn up the heat and add a large handful of pistachio’s. Gently simmer until all the sugar has dissolved. The syrup takes on some of the pistachio’s flavour as it cooks. Once done, remove pistachio’s and wait to cool before using in cocktail.

METHOD

  • Pour the Gin, lemon and syrup into a cocktail shaker filled with ice.
  • Give it a good old shake to make sure everything is cool.
  • Strain into a glass and remove the ice from shaker.
  • Pour mixture back into empty shaker and add egg white.
  • Dry shake…the more you shake, the frothier it gets.
  • Strain into a coupe or martini glass and garnish with a slice of lemon.
  • Enjoy your delicious gin sours!
